Parking Invoice Help, Unaware of 6 month old ticket due to company, fine now raised to £160

My dad forwarded me a letter stating that I owe Anchor Security Services Ltd. T/A Care Parking £160 for overstaying the maximum time in Corporation Street car park, Preston, Lancashire, UK.
I am certain that at the time no yellow parking ticket was given to me as I have always paid them on time. Furthermore the address they have used to contact me has been inapplicable for a few years, I'm not even certain how they obtained this address as I had it changed with both the DVLA and my log book before the incident occurred.
According to their letter they have tried to contact me multiple times since the 'incident', notably the 19th of April, but have obviously been unsuccessful (due to the letters going to our old house), which I'm guessing has resulted in the fine increasing over time.
Their letter doesn't include any evidence that I have parked there, but I'm not sure if they have some and simply haven't released it to me.
Does anyone have any advice? I'm normally the sort of person that will just try to pay the fine and make it go away but this is ridiculously pricey, especially considering the lack of ticket given to me, and the incompetent communication from the company. Who should I perhaps contact in regards to evidence and lowering the cost?

Well the good news is that Anchor do not issue court claims.

The ticket may well have been issued initially in the post - usually for ANPR detection by camera.

The will have accessed the DVLA for the keeper details. Was the v5 updated around about the time of the allegation?

Please send me copies of the correspondence and confirm that I will have the opportunity to appeal the parking notice in accordance with the BPA Code of Practice

For the avoidance of doubt, whether or not I owe any payment to your company, I have no liability for any additional charges
It is not my fault that you sent the correspondence to the wrong address

In the event that you issue a claim to the address on your files that results in a default judgment, I will rely on this letter to hold Care Parking Ltd liable for the full costs to set aside the judgment and for the consequences of any damage to my credit records.
